BBC World's Table: “Bougna: fish stew with sweet potatoes”What are your thoughts on reading a link to A most perilous fish stew? It's gotta be something dramatic, like pufferfish. Right? The sort of thing that can only be prepared by specially-trained chefs, working in exotic, far-flung restaurants. Right?

Wrong!

Valentine Thomas' fish stew is only perilous because she went spearfishing in New Caledonia for its main ingredient, barracuda.* If, however, you source your fish through less taxing routes, such as the supermarket, then its perilousness is completely abolished.

If this revelation kills the frisson of excitement you first felt, you could always add a little pufferfish liver, just to dial it up a notch or two.

[litigation-defence] don't add pufferfish liver! [/litigation-defence]
Pufferfish is poisson, its liver is poison.

* The accompanying recipe substitutes swordfish. That's right, Friend's article is a barely-disguised pimpage of Thomas' recently-published cookbook. How drear.
